Tia Leigh Bransted

Hello! Thank you for visiting my food blog. This section of my blog is all about me, so by the time I’m done telling my life story hopefully you will know me pretty well. :)

I live in West Bend, WI with my boyfriend fiancée (engaged 3/18/12! :D ), Tim, and our daughter, London Paige. We also share our house with three rescued kitty-babies: Speaker, Felix, and Beretta.

If you didn’t already notice, none of my recipes contain animal products. My main goal for this blog is to show people that eating a plant-based vegan diet does not mean missing out on delicious food. I also want to show people that many junk foods can be made into health foods. Not everything that I make is the healthiest food in the world, but the majority of my recipes are healthy.

Another one of my goals for this blog is to be a go-to website for last minute meal ideas. Several times a week I wait until the last minute to cook and end up looking around, either online or in my hand-written book of recipes, for easy recipe ideas.

One of my biggest pet peeves when it comes to recipes is when a recipe calls for about 30 different obscure ingredients where half of them are things I’ve never heard of, are hard to find, and I would probably never use for any other recipe. I try to keep my recipes simple and without too many ingredients. That way, it won’t cost a fortune to go buy the ingredients for a recipe if you don’t already have them in your kitchen.

Cooking and spending time with my family are two of my favorite things to do. I also enjoy meeting other vegans and being an activist. I feel strongly against animal abuse. I recognize that I am lucky enough to live a life free from torture and pain, and I want to help those who are less fortunate and who are suffering. Another hobby I have is gardening; I just started last year. The combination of being deathly afraid of bugs and having a very small yard has led me to mostly container gardening. I was surprised by how much food I could grow just on my front porch during the summer! I like knowing exactly where my food came from, knowing that I didn’t put any chemicals on it, and to be able to just walk outside and pick the freshest ingredients for meals. It’s a lot of fun watching everything grow, too!

Lastly, I take recipe requests! If there’s a food that you would really like a vegan recipe for, or a junk food that you can’t live without and would like a healthier version of… send me a request! Click on “Recipe Request” at the top of the page, and fill out the form.
