This is my first post! 
One of my favorite things to do is to create healthy foods that taste like junk foods! I don’t give my daughter candy bars and soda… not even processed juices (or meat, fish, milk, cheese, eggs….. by now, the average American is probably wondering if we eat at all!). But I don’t want to be the meanest mommy in the world, either. Creating cookies, pies, and ice creams that are healthy enough to be a meal or snack is my way of letting my daughter have “junk food” without me feeling guilty about it.
My parent’s house is only a few minutes away from mine, so I frequently use my family as a panel of taste-testers. The best review I got on this recipe was from my brother… when I asked him how these cookies compared as a healthy alternative to regular peanut butter cookies, he said they were better than regular peanut butter cookies!
So without sacrificing taste, you can eat these peanut butter cookies for breakfast without feeling guilty….. ;)
No-Bake Peanut Butter Cookies
Ingredients
Directions
- Process the peanuts in your food processor until it turns into a creamy peanut butter.

- Add the remaining ingredients to the food processor.

- Process for a few minutes, until everything is finely ground together. You may have to stop and scrape the sides a couple of times.

- Roll the mixture into about eighteen 1-inch balls. When you squeeze the crumbly mixture together, it should get oily and bind easily. Place the balls onto waxed paper and press flat with a fork
- Put the cookies in the freezer for 20 minutes (or in the refrigerator for an hour) to harden them before eating. Store the leftovers (if you have any!) in the refrigerator.

These cookies are DELICIOUS!! I think I might have aten the most at my house. Do you have any recipes for oatmeal cookies or Oreo cookies? And you use a food proccessor, I don’t have one… What should I use?

I use a food processor for many of my recipes because it makes for quick and easy food prep! However, if you don’t have a food processor I would think that a high-powered blender should work just fine (and the one you have should work, Kayz).

I’m going to buy the dates tomorrow. I can hardly wait to try them. I might make enough for my health class to try on Wednesday – if there is any left. I’m sure my 6th grade class will enjoy them.
